A rumor has it that egg and soybean milk cannot be eaten simultaneously, claiming that soybean contains some trypsin inhibitor, which can inhibit the digestion of proteins and thus reduce the nutrition value. The truth is that, if soybean milk is fully cooked, then almost all of the trypsin inhibitor will be inactivated, thus the digestion of protein will not be affected. And if active, trypsin inhibitor can not only impact the digestion of egg protein, but also soybean protein. Besides, trypsin inhibitor also exists in other foods, such as cottonseed, peanut, rapeseed, etc. Meanwhile, eggs also contain a trypsin inhibitor, which can be destructed by cooking.
Then can we brew eggs with soybean milk? The answer is no. The egg may contain some pathogenic bacteria, while the temperature of soybean milk is not enough to heat the egg fully and further kill the bacteria. So don’t use soybean milk to brew eggs.
